Food is not a side activity in Jaipur — it is how the city organises its day. Breakfast is a fried snack eaten standing up, lunch is a thali, and evenings belong to the bazaar stalls. What makes it unusual is the range: desert-scarcity cooking, Marwari sweet shops and Rajput palace kitchens all survive within a few kilometres of each other, often on the same street. Skip the eating here and you get the forts without the city that built them.
