The thali is how Goa eats lunch. One fixed price buys a full plate with unlimited rice and curry, and most kitchens serve it only between noon and three. It is also the cheapest way to eat well in the state, often under three hundred rupees a head.

Rice plate - non vegetarian
What it is
The standard Goan fish thali arrives as a platter: parboiled red rice, fish curry, a piece of rawa-fried fish, a dry vegetable, kismur of dried prawn, pickle, papad and solkadi. Rice and curry are refilled without charge. The fish changes with the day's catch, so ask what came in that morning before ordering.

Rice plate - vegetarian
What it is
Built on the same template without the fish: red rice, a coconut-based vegetable curry, a dry sabzi, dal, kismur made from raw mango or cucumber, pickle, papad and solkadi. Saraswat kitchens make the better version, since their cooking is vegetarian by tradition. Portions are large and refills are included.

Saraswat meal
What it is
Goud Saraswat Brahmin cooking uses coconut, kokum and asafoetida but avoids onion and garlic in temple-style dishes. A full meal runs to khatkhate, a mixed vegetable stew, alongside ambade or raw mango curry, sukke and rice. Fish appears in the household version. The spicing is gentler than Catholic Goan food.

Indo Portuguese meal
What it is
Catholic Goan kitchens serve the Portuguese-descended dishes as a spread: sorpotel, vindaloo or cafreal, chorizo, sannas or poi, and a dessert of bebinca or serradura. Palm vinegar runs through most of it. Sunday lunch is the traditional setting. Heritage-house restaurants in Panaji and Salcete do the fullest versions.
